Tomato soup is a soup with tomatoes as the primary ingredient. It can be served hot or cold and may be made in a variety of ways. It may be smooth in texture, and there are also recipes that include chunks of tomato, cream, chicken or vegetable stock, vermicelli, chunks of other vegetables, and meatballs.

Units Scale
  • 1012 Ripe Tomatoes
  • 1 Large Onion (chopped)
  • 45 Cloves Garlic (grated)
  • 1 Tablespoon Dried Oregano
  • 1/3 cup Olive Oil
  • Salt & Pepper to taste
  • 2 Bay Leaves
  • Sour Cream (topping)


  1. Rinse and cut tomatoes in half lengthwise.
  2. In a bowl, mix the garlic, salt, pepper, oregano, and olive oil.
  3. Toss the tomatoes in the mixture, add bay leaves then lay in a baking dish and roast at 180C / 350F for about 25-30 minutes or until the skins have split and the tomatoes have shrunk in size.
  4. Remove the skins and place them in a blender along with all the juices, garlic, and oil from the bottom of the baking dish.
  5. Blend until smooth.
  6. Adjust seasoning and store in a jar, top with a dollop of sour cream, and serve.
  7. Enjoy!!
