Being Tuesday, our fasting day, it’s so difficult to please everyone, so I decided to make this very easy side dish.

Yield: 2 servings

A Side dish Roast Butternut with Feta

Roast Butternut with Feta for fasting day

A perfect side dish for your fasting days.

Prep Time 5 minutes
Cook Time 1 hour 10 minutes
Total Time 1 hour 15 minutes

Ingredients

  • ½ cleaned and washed butternut
  • 3 tbsp sweetcorn
  • Salt to taste
  • Pepper to taste
  • Thyme to taste
  • 1 tbsp butter
  • 4 tbsp crumbled Feta

Instructions

Season butternut with spices.

Sprinkle sweetcorn over

Place butter over

Wrap in foil

Cook in the oven at 180 degrees C / 350 degrees F for 1 hour

Then remove and sprinkle with feta

Cook for a further 10 minutes

Remove from oven and serve immediately
