I used to buy a Chocolate Chip Muffin at my High School Cafeteria as a special treat every now and again. Now I’m talking 20+ years ago, and I’ve never found a recipe that makes a muffin as perfect as those ones. Until today that is!! This is it. These are the PERFECT Chocolate Chip Muffins.

A muffin is an individually portioned baked product, however, the term can refer to one of two distinct items: a part-raised flatbread that is baked and then cooked on a griddle, or a quickbread that is chemically leavened and then baked in a mold.

What is the secret to moist muffins?

So the 3 simple secrets for beautifully soft and moist blueberry muffins are:

  1. use butter AND oil -butter makes things tasty but oil makes things moist. So use both!
  2. don’t mix the batter more than 12 times; and.
  3. don’t bake for longer than 20 minutes.

What makes a muffin fluffy?

Having eggs, butter, and milk at room temperature helps them form a smooth mixture that traps air and expands when heated in the oven. That expansion makes your muffins fluffy and light.

Description

I used to buy a Chocolate Chip Muffin at my High School Cafeteria as a special treat every now and again. Now I can bake my own – this is the best ever!


Ingredients

Units Scale
  • 2 1/4 cup flour
  • 2/3 cup sugar
  • Pinch of salt
  • 4 tsp baking powder
  • 1 egg
  • 1 cup milk
  • 1/2 cup oil
  • 3/4 cup chocolate chips (I used 1/2 cup chocolate and 1/4 cup butterscotch chips)

Instructions

  1. Sift dry ingredients together.
  2. Mix wet ingredients, then add to dry and combine.
  3. Fold in chocolate chips at the end.
  4. Bake at 375°F / 190°C for about 18-25 minutes.
  5. Can substitute any fruit for the chocolate chips, up to 1¼ cups if fresh (or stick to ¾ cup if dried).

Exactly what you do when you take them out of the oven. Sniff ’em, that’s correct yes, they are so awesome that’s what you want to do, and then devour them with a delicious cuppa coffee.
