Description

Weekend request from my children for kebab chutney & roti. Treat them to this awesome meal and you will have happy children at home.


Ingredients

Units Scale
  • 300g Ground Meat (your choice)
  • 1 tbsp. paprika/masala
  • 1 tbsp. ginger & garlic
  • 1 tbsp. dried thyme
  • 1 tbsp. garam masala
  • 1 onion (grated)
  • Chopped dhania
  • Salt to taste
  • Oil

Roti

  • 2 cups of flour
  • 1 tsp. salt
  • 2 tbsp. butter
  • Rapidly boiling water
  • Butter for brushing (melted)
  • Flour for dusting

Chutney

  • 12 ripe tomatoes (peeled & chopped)
  • 1 large onion (chopped)
  • 5/6 green chilies
  • Oil
  • Salt to taste
  • 1 Tbsp. Masala (your heat level)
  • Chopped Dhania/Parsley (garnish)

Instructions

Kebab

  1. Cook the onion in the paprika/masala till soft.
  2. Let it cool.
  3. To the meat, add all the spices, onion, and dhania.
  4. Mix thoroughly. Form into balls and fry till fully cooked.

Roti

  1. In a bowl, add the flour and salt.
  2. Rub in the butter.
  3. Pour in the boiling water and mix well to form a soft dough.
  4. Turn over onto floured counter and knead till the dough is smooth and pliable.
  5. Break of (golf ball-sized) pieces of dough.
  6. Flatten and dip in flour.
  7. Roll out into circles on a lightly floured surface.
  8. Toast in a non-stick pan/Tawa.
  9. When brown spots appear on the bottom, flip over and brush with butter, repeat on either side.
  10. Keep covered to remain soft.
  11. Serve and enjoy!!

Chutney

  1. Heat the oil.
  2. Add onion to fry till soft (no colour).
  3. Add the green chillies and masala.
  4. Allow frying for a few minutes until the masala is cooked out.
  5. Drop in the tomatoes and mix well.
  6. Add salt and leave to cook till tomatoes have broken down and are soft and thick.
  7. Then place the kebabs into the chutney and let it simmer for a few minutes.
  8. Once fully cooked, garnish with dhania/parsley.
