
Coziest Homemade Beef Wellington
All mothers are great cooks, mine was exceptional. But the best dish I learned from her was Beef Wellington. Of course, in those days there were no such luxuries as parma ham and puff pastry. She made her own pastry and used bacon. We are lucky today to improvise with store bought puff pastry. Of course over the years I tweaked her original. Let me present my mother’s day Beef Wellington with season vegetables and baby roast potatoes.
