Description
Made my usual meringue and filled it with a mixture of very lightly sweetened whipped cream and plain yogurt, then topped it with fresh berries, sugared cranberries, and mint leaves. The slight tartness of the yogurt really balances the sweetness of the meringue. I could not stop eating this!!!!
Instructions
- Beat egg whites in an electric stand mixer until stiff peaks form.
- Add about a half cup of the sugar very slowly, one spoon at a time, while beating.
- Add salt and cream of tartar.
- Then add the rest of the sugar.
- Turn off the mixer once fully combined.
- Pipe onto parchment paper in a circle with raised edges to hold in the cream.
- Bake at 225°F for 4 hours or until hollow and light all the way through.
- Fill with cream & yogurt mixture and top with berries right before serving.
