When you feel like something sweet and yummy, and did not anticipate to bake, then you make do with what’s available and use your own imagination and then you have the following ’round flat cake’
Ingredients:
1 sheet Butter Puff Pastry (thawed, but cold)
1 extra large Fuji apple, or 2 medium apples (You can also use golden delicious)
½ cup dried cranberries (I guess you can use fresh or frozen cranberries)
50g melted butter
Juice of ½ fresh lemon, ±1-2 tablespoons
1 heaped tablespoon sugar
½ tsp cinnamon (Use more if you like cinnamon)
1 large egg, lightly beaten
12.5 ml buttermilk
1 tsp sugar
Directions:
Preheat oven to 375F.
Open and unroll pastry.
Roll it slightly thinner will a rolling pin.
Core and slice the apple in bite size pieces, keep the skin on.
Toss apples in a large bowl and mix with butter, lemon juice, sugar and cinnamon.
Stack the mixture in the centre of pastry, leaving ± 2-inch border.
Pull pastry border up and over outer edge of apples, leaving apples at centre bare and pleating pastry as you pull it up.
Beat the egg with a fork, then add the buttermilk and mix through.
Brush the pastry with egg mixture and sprinkle with extra sugar and if you prefer some additional cinnamon.
Bake in centre of oven for 25-30 minutes or until pastry is golden and apples are tender.
Let stand 5 minutes before serving with ice cream and if you prefer serve cold with cream.
