Ingredients

Units Scale
  • 1 Tenderloin (your choice)
  • 1 Package Bacon
  • Spice Rub
  • 1 Tablespoon Paprika
  • 1 Tablespoon Dried Oregano
  • 1 Tablespoon Cumin
  • 1 Tablespoon Ginger Powder
  • 1 Tablespoon Garlic Powder
  • Salt & Pepper to taste
  • Olive Oil

Herbed Mushroom Gravy

  • 1 Punnet Brown Mushrooms
  • 1 Large Onion
  • 1 Tablespoon Fresh Thyme
  • 1 Tablespoon Dried Basil
  • 1 Tablespoon Fresh Oregano
  • 2 Teaspoon Garlic Powder
  • About 1 cup of Chicken Stock
  • 1 Tablespoon Flour & Water Slurry
  • Pan drippings
  • Salt & Pepper to taste

Instructions

Pork Tenderloin

  1. Brush the whole tenderloin with oil.
  2. Sprinkle the spice rub all over the meat.
  3. Lay bacon strips flat on a baking sheet.
  4. Place meat on the bacon and wrap it tightly around (use toothpicks if you prefer)
  5. Bake at 180C  for about 40 minutes (use an oven thermometer to check internal temp).
  6. When fully cooked, turn on the grill to crisp up the bacon.
  7. Remove from the oven and allow it to rest for about 15 minutes.
  8. Slice, serve & enjoy!!

Broccoli Rabe

  1. Place in a pot of salted boiling water for 1 minute.
  2. Remove from water and place in a bowl of iced water.
  3. Heat 2-3 tablespoons oil/butter in a pan, and cook 1 red onion till soft.
  4. Add in broccoli, seasoning & sauté.

Potatoes

  1. Skin and cube potatoes.
  2. Place in a pot of salted water.
  3. Boil till tender.
  4. Drain and place back in the pot.
  5. Heat 1/3 cup Olive Oil, Salt & Pepper, Dried Herbs & Garlic Powder till warm.
  6. Pour the warm mixture into the potatoes and mix well.

Herbed Mushroom Gravy

  1. Heat olive oil in a pan.
  2. Cook the onion till soft.
  3. Add in mushrooms, garlic, seasonings, pan drippings, and stock (½ cup at a time)
  4. Cook on low for about 10 minutes.
  5. Stir in slurry and allow to cook to your desired thickness.
  6. Remove from heat and add in the herbs.

    • Yes, I am aware that lots of people do not enjoy or eat pork! It’s a delicious recipe and maybe you can try it and substitute it with a meat you do enjoy and eat.
