Asian Gammon Coriander and Coke for the best meal ever
Ingredients for this succulent Asian Gammon Coriander and Coke
Ingredients
- 1.5-2kg Gammon joint
- 1 cup coke (NOT diet)
- 1 cup of soy sauce
- 2 tbsp garlic/ginger paste
- 1 cup tomato sauce
- 1 tbsp Shaoxing rice wine
- 2 tbsp garlic/ginger paste
- 1 tbsp Hoisin sauce
- 1 tsp five-spice powder
- ½ tsp ground black pepper
- ½ cup fresh coriander
Method
- Preheat oven to 200 °C. Simply whisk the ingredients (except coriander) in a jug.
- Place the gammon in a roasting pan with a lid.
- Pour the sauce over the gammon, sprinkle with coriander and cover.
- Lower temperature to 175 degrees.
- Continue to bake for about 2½ hours. Remove lid.
- Scrape the coriander off the top into the sauce in the pan.
- Continue to ladle the sauce over the top and baste it.
- Now you can continue baking uncovered for another ½ hour or so till succulent and oh so delicious.
Should you be so lucky to have any gammon left, the best part about is that to me it seems like it goes on forever and is the perfect topping for sandwiches, to make a gammon salad with mayonnaise, or if you feel like it cut it, you can add in an omelet. Use your own imagination, the opportunities are endless.
