Enjoy this wonderful and delightful Garlic Parmesan Roasted Sweet and Yellow Potatoes as a side with your Thanksgiving meal.
Ingredients
Serves 8:
- 1 Extra large sweet potatoes
- 2 Extra large yellow potatoes
- 2 large red onions
Sauce:
- 3 tablespoons olive oil
- ½ stick unsalted butter
- 5 minced garlic cloves or 2 heaped tbs. bottled garlic
- 1½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon dried parsley
- 2 x ⅓ cup freshly grated Parmesan
- Salt and freshly ground black pepper, to taste
Method:
- Preheat your oven to 425°F (210°C).
- Clean, peel and cut sweet and yellow potatoes as well as the onions in ¼” slices.
- Sprinkle a smidgen of olive oil on the bottom of the baking pan.
- Pack one slice of sweet and then yellow potato and lastly a slice of onion in rows in the pan.
- Melt the butter in a glass container in the microwave for 10-15 seconds.
- Add to and combine with the rest of the sauce ingredients.
- Use a kitchen brush and generously paint the sauce over the rows of potatoes and onions.
- Cover with aluminum foil and bake in a preheated oven for 1 hour or until tender when pierced with a fork.
- Remove foil and sprinkle the 2nd ⅓ cup of parmesan on top.
- Now return the baking pan to the oven turn up the temperature to broil and bake for 10-15 minutes until crispy and golden brown.
- Serve immediately and enjoy!
