Hannah's Light fried sole

Ingredients:
For 2 of us I did 3 soles
About 1/2 cup flour
Fish spice
Salt
Pepper
Garlic and herb
Origanum
And whatever other you wish for
Mix your spices will with your flour
Beat 2 jumbo eggs well
Method:
In an electric frying pan, pour a reasonable amount of oil, covering the bottom well and put on high temperature.
Coat the soles very well in the flour/spice and the dip into your egg, coated well.
Place carefully into the heated oil – they didn’t take more than about 3 minutes either side to get nice and golden brown.
Fish generally cooks very quickly, especially soles as they are very thin. Be careful not to burn or over cook otherwise they become tough.
Place on to a platter lined with paper towel to absorb the oil. I place a layer on top as well.
Serve either hot or cold.
Vegetables
These were steamed vegetables from Woolworths, done for 7 minutes in their packet, in the microwave.
Rice
Everyone has a different way of making their rice.
My way: about 1 cup of Tastic rice – wash
Place in pot and cover with about 2 cups water.
Bring to boil and let water boil away.
Take off stove, wash out all the starch and pour again about 2-3 cups water over the rice, a drop of alt and a teaspoon oil.
Bring to boil and again till the water has boiled away. Pour into serving dish.
