Ingredients :
Filling
15ml butter
1 large onion,finely chopped
1 clove garlic,bruised
10ml grated ginger
Tsp of mild curry powder
5ml turmeric
300g minced beef
2 tomatoes,peeled and chopped
10ml brown sugar
10ml fine apricot jam
1 potato peeled and cubed
1 carrot peeled and cubed
Salt and pepper to taste
2 leaves of fresh bayleaf
For the Vetkoek:
240g cakeflour
15 ml baking powder
Salt
300ml tepid water
1 egg whisked
Oil for deep frying
Method:
Vetkoek: sift the flour,baking powder and salt
Beat together the water and egg and add to the flour mixture. Mix to form light dough.
Pour the oil up to 5cm deep in a frying pan and heat until medium hot.
Place spoonfuls of dough in the hot oil and fry until golden brown on both sides.
Remove from the oil with slotted spoon and drain on a kitchen paper.
Filling: heat the butter and saute the onion,garlic,ginger,bayleaf until the onionnis soft.
Add the curry and turmeric and fry for a minute longer.
Add the mincemeat little by little and fry until browned.
Add the tomatoes and fry them lightly.
Add the rest ingredients and simmer until meat is cooked.
Cut the Vetkoek open and place a spoonful of the mincemeat mixture in each.
