Bean Patties Instead of Meat Patties

Ingredients
- 2 tins of kidney beans drained.
- 1 red onion (finely chopped)
- 1/2 red or green pepper (finely chopped)
- 1 finely grated carrot
- 1 tsp cumin
- 1 tsp salt
- A pinch of black pepper
- 4 tbsp ketchup
- 1/2 cup of oats
- Burger buns
- 4 tablespoons of Mrs. Balls Chutney (optional)
Instructions
- Use a fork to mash down the beans.
- Add some olive oil to the frying pan.
- Fry the onions for 15 minutes on medium-high.
- Add the finely chopped peppers and carrots, and fry until softened.
- Add the cumin, salt, and black pepper.
- Add the vegetable mixture to the beans along with the oats and ketchup.
- Mix everything well.
- Allow to rest for 10 minutes.
- Shape the mixture into 14 small burger patties and fry in a little olive oil on medium to high heat for about 3 minutes at a side.
- Add your favorites like tomatoes, avocado, and cucumber to your bean burger, and enjoy a healthy, filling burger.

Dear Debra, I totally understand and as a meat lover myself, at first I had a very hard time with enjoying vegan or vegetarian foods. Our Son and DIL and family has gone vegan (more than 12 years) and I have come to like the food they enjoy and whenever they visit we only have vegan food (no other regular food with be on the table) as we respect their choice.
