Preheat oven to 180 C line a large baking tray with parchment paper
1 x 400 g store bought puff pastry.
I made 2 pizza rings with this packet of pastry
1 egg lightly beaten for glazing

Filling:
250g tub smooth cottage cheese,
1/2 yellow pepper sliced thinly,
300 g peppered salami sliced or any cold cut of your choice
1 cup grated mozarella cheese
Sliced mushrooms optional
Sprinkle of origanum & sprinkle of black pepper
Cut the pastry in half and roll out into a circle the size of a dinner plate on a lightly floured surface. Lift your circle and place on your parchment paper on baking tray.
Take a soup bowl 14 x 14 cm and place in the centre of the circle.
On the area outside the bowl spread cottage cheese leaving a slight edge on the outer edges that can be folded inwards.
Next place your salami slices and then the yellow pepper.
Mushrooms if using. Sprinkle with grated mozarella cheese.
Season with pepper and origanum.
Remove the soup bowl from centre area and cut 4 crosses in the centre. ( 8 triangles ) Lift each triangle and fold towards the outside edges tucking your edges as you go.
Brush with egg wash. Sprinkle again with origanum. Bake for 20 minutes
** Note : You can use different fillings ie. Pesto sauce as your base, sliced tomatoes, sliced zucchini, mozarella balls, black olives or any filling like chicken etc… I hope you like it👍👍
