Ingredients

Main dish

  • 1.25 kg chicken thighs/legs
  • 1 tsp white sesame seeds
  • 1 green onion, sliced
  • 1 tsp of salt
  • 1 tsp of pepper
  • 1 tsp of chicken spice

Honey Soy Marinade

Instructions

  1. Mix the salt, pepper, and chicken spice in a Ziplock bag, place the chicken in the bag, and shake it to cover the chicken.
  2. In a bowl mix marinade until honey is dissolved.
  3. Pour over the chicken (I scored chicken) in a ziplock bag.
  4. Marinade for 30 minutes, or overnight.
  5. Preheat oven to 200°C/400°F (180°C fan).
  6. Line a large tray with foil then paper.
  7. Spread chicken out on the tray, skin side down but reserve marinade.
  8. Bake 30 minutes. Drain off juices on the tray and discard them.
  9. Pour reserved marinade over chicken.
  10. Toss to coat then spread the chicken out, skin side up.
  11. Turn oven down to 180°C/350°F (160°C fan).
  12. Bake chicken for 30 minutes, basting with tray juices every 10 minutes (3 times).
  13. Sauce should be syrupy by the end so you can glaze well.
  14. Transfer chicken onto a serving plate.
  15. Pour over syrup and sprinkle with sesame seeds and green onion.
  16. Serve!
