Description

Made from real potatoes, and simple ingredients you have in stock at home in the kitchen.

Potato smileys can be enjoyed as a snack by the little ones and are great for the lunch boxes. My big kid certainly has his share too.

Instructions

Boil the potatoes in salted water.

Drain and add all the spices, breadcrumbs, parmesan, and cornflour and mix well till it forms a soft dough. (I found that I needed to add more breadcrumbs to form a firmer mixture).

Wrap the mixture in cling and refrigerate for 15-20 minutes.

Once cooled, place on a piece of greaseproof paper.

Shape (I used my hands) into a large thickish circle.

Cut small rounds and form the face.

Use a straw to poke holes for the eyes and a spoon to shape the smile.

Brush with oil and bake at 180C / 350F for 20-25 minutes until brown or fry in oil on the stovetop.

Serve with your choice of sauce and enjoy!!
