How to make Potato Smiley Faces which can be enjoyed as a snack by the little ones and is great for the lunch boxes as well.
- 3-4 Potatoes
- 1/4 Cup Breadcrumbs (to start off)
- 2 Tablespoons Cornflour
- Salt & Pepper to taste
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Onion Powder
- 1/2 Teaspoon Paprika
- 1/2 Cup of Grated Parmesan (optional)
Boil the potatoes in salted water.
Drain and add all the spices, breadcrumbs, parmesan, and cornflour and mix well till it forms a soft dough. (I found that I needed to add more breadcrumbs to form a firmer mixture).
Wrap the mixture in cling and refrigerate for 15-20 minutes.
Once cooled, place on a piece of greaseproof paper.
Shape (I used my hands) into a large thickish circle.
Cut small rounds and form the face.
Use a straw to poke holes for the eyes and a spoon to shape the smile.
Brush with oil and bake at 180C / 350F for 20-25 minutes until brown or fry in oil on the stovetop.
Serve with your choice of sauce and enjoy!!
