Chicken Souvlaki

  • 46 Chicken Breasts/Thighs (cubed)

Marinade

Olive Flatbread

  • 22 1/2 cups Flour
  • 1 Tablespoon Oil
  • 1 Teaspoon Salt
  • 1/2 cup Warm Water
  • 1 Teaspoon Sugar
  • 10g Yeast
  • 1/2 cup Milk
  • 5 Chopped Olives

Instructions

Chicken Souvlaki

  1. Allow chicken to sit in the marinade for about 40-45 minutes then thread onto skewers.
  2. Cook on a hot grill or in the oven.

Olive Flatbread

  1. Mix the yeast and sugar into the warm water.
  2. Allow it to sit for about 10 minutes until it foams.
  3. Mix flour and salt then pour it into the yeast mixture, oil, and milk.
  4. Add in the chopped olives and stir well until a soft dough is formed.
  5. Add more water if needed at this stage.
  6. Turn out onto a lightly floured surface and knead for 10 minutes.
  7. Place in an oiled bowl and cover, allow to rise in a warm spot for an hour.
  8. Once risen, divide into smaller pieces and roll out.
  9. Cook in a hot pan.
  10. Serve with the skewers and enjoy.
