Should I bake chicken glass or metal?
Glass has a good insulation valve and when hot retains its heat – but things can stick to the glass if you are not careful-… metal is okay but I tend to line things with foil – which is equally done with glass especially if you are doing a whole chicken.

- Preheat the oven to 180°C / 350°F.
- Place the chicken in an oven-proof pan/dish and add the red onion wedges, sliced head of garlic, and kalamata olives.
- Sprinkle over the dried oregano, season to taste, and drizzle over the olive oil and lemon juice.
- Place it in the oven and allow to roast for 20-25 minutes until the chicken is cooked throughout and the skin is golden and crisp.
- Serve with Tzatziki, and extra lemon (I added potato wedges).

Tzatziki is a salted yogurt and cucumber dip that’s made of strained yogurt, shredded cucumber, olive oil, garlic, lemon juice, salt, and herbs.
Should you bake chicken covered or uncovered?
You never have to worry about covering chicken while baking, as it’s fine to bake it uncovered, and once your chicken is in the oven, it’s hands-free until you need to check the temperature. So you can whip up a no-cook appetizer, side dish, or dessert if you’re feeling ambitious
