Soft Fluffy Pancakes with Coconut Filling

Light, tender pancakes, oh my, such Soft Fluffy Pancakes with Coconut Filling to tantalize your taste buds and just enough for the sweet tooth.

Pancake batter
4 eggs
500 ml Cake flour
2 cups water
1 cup fresh milk
2 teaspoon soft butter
One teaspoon baking powder

Beat with beater and let it stand for 30 minutes
Heat a lightly oiled griddle or frying pan over medium-high heat.
Pour or scoop the batter onto the griddle.
Bake until brown on both sides
Makes ± 27 pancakes

 

Soft Fluffy Pancakes with Coconut Filling

Filling:
Coconut filling
1 teaspoon butter
1 cup coconut
½ cup sugar
2 stick cinnamon
2 whole elachi (cardamon)
Pinch of fine elachi (cardamon)
½ cup water

Method:
Add all together in a small pot and cook until all water is cook away on slow heat.
