Soft Fluffy Pancakes with Coconut Filling
Light, tender pancakes to tantalize your taste buds and just enough for the sweet tooth.
Pancake batter
4 eggs
500 ml Cake flour
2 cups water
1 cup fresh milk
2 teaspoon soft butter
One teaspoon baking powder
Beat with a beater and let it stand for 30 minutes
Heat a lightly oiled griddle or frying pan over medium-high heat.
Pour or scoop the batter onto the griddle.
Bake until brown on both sides
Makes ± 27 pancakes
Filling:
Coconut filling
1 teaspoon butter
1 cup coconut
½ cup sugar
2 stick cinnamon
2 whole elachi (cardamon)
Pinch of fine elachi (cardamon)
½ cup water
Method:
Add all together in a small pot and cook until all water is cook away on slow heat.
